Cucumber and Chicken Salad

Quick, easy, and so satisfying

Summer has started. Sun rays are at their strongest. Florida heat feels like fire on your skin. No better way to cool off than cucumbers. They’re super hydrating. High in vitamins and minerals, such as, vitamin c, vitamin k, manganese, potassium, and more. They contain antioxidants, lowers blood sugar, and aids with weight loss due to their high water and low calorie contents.

Meal prep some seasoned chicken to use for the week

The chicken was simple. Just salt and pepper so I can season it more depending on the dish. For example, for the salad I added oregano, lemon, balsamic vinegar, olive oil, and tiny dash of salt and pepper.

Salads are so refreshing after the summer heat

The greens have their own special health benefits; arugula and spinach. Arugula is big on antioxidants, helps with immune system, aids with weight loss, and high in vitamin C. Spinach is filled with vitamin A, vitamin C, and vitamin K1. It also helps with eye health, lowers blood pressure, and lowers oxidative stress.


  • One chicken tenderloin
  • 2 cucumbers
  • 2 handfuls of arugula and spinach mix
  • Olive oil
  • A little balsamic
  • A little lemon
  • Salt
  • Pepper
  • Oregano
